Not sure what is going on - it works for us here in the office. Can you try manually downloading the latest version (https://binaries.eveonline.com/EveLauncher-1086194.tar.gz) and reinstalling from that?

It's likely that Wine is spewing a lot of messages into the log. The launcher captures the logs and doesn't cap the amount stored. It's on my list of things to improve.
